Calandra, located at The Best Western/Fairfield
Executive Inn, 244 Route 46 East, Fairfield, NJ, will accentuate
a heavier interest on pastas, Sicilian style thick crust pan pizza
and dry aged steaks prepared over a custom-made open wood Mesquite
grill made especially for Cucina Calandra. We offer an array
of family style appetizers prepared in large style platters to feed
2, 4, 6 or 8 guests; Cucina Calandra’s desserts will be a
unique new selection of different Calandra style pastries and desserts,
specially made by Calandra’s Bakery exclusively for Cucina
Calandra. |

While our other restaurant, the Calandra's
Mediterranean Grill offers fish, veal, thin crust pizza and
other Mediterranean classics with a Northern Italian influence;
this restaurant is distinctly classic Southern Italian, with a home
made Sicilian flare of cooking and preparation, with dishes such
as dry aged steaks, traditional pastas, and chicken grilled on a
mesquite open flamed stone grill, as well as Sicilian style thick
crust pizza (cooked on a stone) and a variety of flat breads with
traditional seasonings and toppings. Click

Southern Italy to our restaurant with the added dining experience
of wood beams on the ceiling, stone walls, stone archways, stone
floors, iron gates, water fountains, and an outdoor courtyard feel
and look; a truly "Family Kitchen" atmosphere.
In addition to the main dining room, there will be a second room
for a more quiet and intimate dining experience for couples and
singles, known as our Executive
Lounge. Here, you are surrounded by beautiful dark
raised panel walnut walls with crown molding accents, and comfortably
large oversized Queen Anne chairs to relax and enjoy your meal.
The Executive Lounge will offer the same menu as Cucina Calandra
as well as fine desserts, coffee & espressos, and is complete
with a wine bar. The lounge will also include a high-speed internet
cafe!
In addition, Cucina Calandra will have a banquet facility
that will accommodate parties of up to 220 people and
will be open approximately March 2004.

BEEF AGING PROCESS
Our dry age steak is aged on the bone for 15 days following
3 weeks of wet aging. During this period, the sirloins undergo
enzymatic changes that intensify the flavor, deepen the color,
and tenderize the meat, by softening the connective tissues.
We then grill our steaks on an open wood mesquite grill for
a flavor only available at Calandras.
